Japanese Gin


Craft gins in Japan started blooming in 2017.
Shochu distilleries and Sake breweries invested their traditional and new techniques to use Japanese botanicals such as Sansho, (Japanese Pepper), Ginger, Seaweed, tea, and so on.
Japanese gins are still growing, but already marked the high evaluation in the world. 

Wa Gin Japanese Craft Gin Meiri shurui

Wa Gin is Japanese original craft gin based on spirits distilled from sake and was stored for 10 years. They used seven high quality botanicals such as spicy and woody scented fine juniper berries, lemon peel, orange peel citrus fruits and cinnamon in this gin.

Iseman uses six types of plants grown in the rich nature of the Ise-Shima region: aosa, Ise tea (roasted tea), mitsuba, and yuzu, plum, and ginger, which are familiar to Japanese people.
``Isegami'', made at a distillery in Ise using plenty of Japanese botanicals, is a craft gin with a rich aroma that lets you feel Ise-Shima. To enjoy the aroma, we recommend drinking it on the rocks, carbonated drink, or gin and tonic.

Umegae Shuzo in Nagasaki (the first place gin was distilled in Japan) are re-creating the past in the present with Yokitsuki Gin.

With patience and perseverance, Umegae have crafted a distilled sake-based gin characterized by non-traditional botanicals. These include loquat, strawberry, lemon, mikan,and Umegae’s namesake, plum branch.


Tasting notes: A light base with unusual botanicals. Sweet, tart with both acidity and intensity of flavour from mikan and lemon. This is complemented by loquat’s stone fruit characters, such as white nectarine and Morello cherry – this also enlivens the berry notes from strawberry and ume. The plum branch provides a pleasant woody foundation upon which the fruity botanicals shine.

NUMBER EIGHT GIN is distilled in NUMBER EIGHT DISTILLERY, located in QUAYS pacific grill ( AMERICAN restaurant in Minatomirai, Yokohama). Taken after the name of the distillery, NUMBER EIGHT GIN uses exactly 8 botanicals (Hops/Coffee Beans/Yerba Buena/Avocado Seed/Orange/Juniper Berries/Lemon Verbena/Lemon.

Coffee beans are roasted at Hammerhead Roastery and hops are used at NUMBER NINE BREWERY (both located in QUAYS pacific gill also). Yerba buena are used in our popular cocktail "mojito" and the avocado seeds come from all of our Mexican restaurants!

Japan stretches from the north (nearby Russia) to the south (nearby Taiwan and Southeast Asia). There are also distilleries of rum in southern islands in Okinawa, Amami Islands, and Ogasawara, the island belonging to Tokyo Metropolis.

Drunken Sweet Baked Potato Liqueur

Its ingredients include a paste made from the sweetest kind of Japanese sweet potato, known as the “silky sweet”, one of the most popular kinds to use for roasting in Japan. This paste has been mixed with a specialty honey and fermented to a 20-percent alcohol level, so it has a decent punch as well as a delicious flavor.

Recommendation:
Mixing it with a little bit of milk for a creamy cocktail. For best results, the recommended combination is three parts milk to one part liquor, but it’s up to your tastes to decide how you like it best. You could also pour it over ice cream for a delicious, mature desert, use it as a topping for pancakes, or bake and cook with it for a nice, fragrant, alcoholic touch.

They borrowed whiskey barrels matured in Chichibu from Chichibu Distillery, and started the barrel aging of 100 years Plum Wine, which has the title of the best in Japan.

The original 100 Years Plum Wine has been aged for 12 months. Finally, we added selected malt whiskey base sake to express the vanilla aroma derived from the whiskey barrels and the complex and profound sweetness. This is the first in a series of explorations into the possibilities of plum wine and whiskey casks.
